Butternut Squash Baked Fries



This is an OMG recipe. Recently, on Food Network, I saw a chef recommend making baked butternut squash french fries.

This is what I did, and I had to modify the placement of the cut squash fries because my husband cannot eat anything too crunchy:


  • Wash the squash.
  • Cut into sections.
  • Sliced the skin off. (Be careful with that knife.)
  • Cut the squash the desired length and width for fries.
  • On a larger pan and more room to spread the squash fries, drizzle with extra virgin olive oil.
  • Sprinkle salt and desire spices.
  • Mix well.
  • Place into a preheated 400 degree oven for 40-50 minutes, depending on placement of oven racks.

Drink Almond Milk


My favorite daughter-in-law suggested I try Pure Almond milk.

I love the stuff, unsweetened of course. I drink a 1/2 cup daily.
Since I have all these food allergies, almond milk should help me.

Baptisms are Wonderful

We attended a baptism yesterday. Baptisms and dedications always take my breath away.
Just knowing the "little one" is a child of God. In most church denominations when
a child is water baptized, it is called baptism. In the non-denomination churches some
do not use water baptism for a child and it is called a dedication.


José and Jane Castaneda hold their daughter, Cecilia Beatriz, who
was baptized Sunday.

Grandma holds her granddaughter.


Sister, Cristie, holds her niece.


With husband, sister, Eileen, holds niece.


Great aunt holds her sleeping great niece.


Friends are thrilled to hold Cecilia.
