Gluten Free Rice Flour and Me



Good morning, world!

Many times I have watched
how my body swells with gluten free rice
flour. Yesterday, I made
apple cobbler with gluten free rice flour, butter, and Stevia.
When I use chick pea flour
there is no body swelling.

Isn't this interesting?

Obsessed with Eyeglasses



Good evening, world!

All day I have been obsessed with eyeglass
ordering to find the best price online for 
prescription eyeglasses and sunglasses.

I had to try optical online ordering one time, 
rather the traditional optical facility.
It has been frustrating.
Prices and progressive lenses have been
a challenge; however, I did it!!

I don't care if the frames are designer. 
Generic is just fine.
I will post in a couple weeks how I
like my new eyeglasses.

Chicken Stew with Sweet Potatoes




Good morning, world!

Because of my food allergies and I 
believe eating the best I can,
I made chicken stew with sweet potatoes,
celery, carrots, onion, and garlic.
My chicken was lightly browned on both
sides in my Revere Ware Dutch Oven. 
Then my vegetables were
added. 
Instead of chicken stock, I added water.
Four bay leaves, salt and pepper were
my last addition.


Simmered for 1 1/2 hours in a 4 1/2 quart
Dutch Oven. 

For a thickening, I made rue/roux with
butter and chickpea flour, equal parts. 
Let it simmer.

It is delicious!
