Yesterday, I made peach cobbler with gluten free rice flour. WOW! It was delicious.
I peeled and cored more than two pounds of small Michigan peaches. Then I melted one stick of butter, placed this in 1 cup of rice flour and 1 cup of brown sugar, and mixed well by hand. Poured the dry mixture over the peaches and baked 42 minutes in a 375 degree oven.
Oh, my goodness. There are so many ways this recipe can be modified to your hearts desire.
