Peach Cobbler with Gluten Free Rice Flour

Yesterday, I made peach cobbler with gluten free rice flour. WOW! It was delicious.

I peeled and cored more than two pounds of small Michigan peaches. Then I melted one stick of butter, placed this in 1 cup of rice flour and 1 cup of brown sugar, and mixed well by hand. Poured the dry mixture over the peaches and baked 42 minutes in a 375 degree oven.

Oh, my goodness. There are so many ways this recipe can be modified to your hearts desire.

So many events in Michigan this month before the kids go back to school in a couple weeks. This weekend Lapeer is having Lapeer Days. Imlay City is having the Eastern Michigan Fair.
